On October 24th, Princeton celebrated national Food Day by serving locally grown butternut squash soup throughout campus, in eateries and in dining halls. Nearly 100 gallons of the soup was consumed by the end of the day.
The effort, spearheaded by Dining Services and the student group, Greening Dining, also engaged community schools and businesses. Dining Services provided locally grown butternut squash to all four Princeton public elementary schools, John Witherspoon Middle School and Princeton High School. And local restaurants included a variety of dishes featuring the fall favorite vegetable on their menus that day.
