Reduction of food waste is a major strategy for reducing our nation’s carbon footprint. The production, processing, transportation of food and the decomposition of food waste in our landfills result in significant greenhouse gas emissions. Sadly, 40% of food produced in the United States is never eaten. Meanwhile, here in Princeton, 40% of low-moderate income residents have cut the size of their meals because there was not enough money to buy food. Come learn how we can reduce our carbon footprint by reducing food waste and combat food insecurity in our community.
